Here's the recipe:
Herb-roasted Chickpeas
1 3/4 cups chickpeas (or one 15 oz can) 1 Tablespoon EVOO 1 teaspoon oregano or Italian seasoning a dash of salt 1/4 cup of parmesean cheese
Preheat oven to 400 degrees Fahrenheit.
Toss together the chickpeas, EVOO, herbs of choice and salt in a bowl. (I did it right in the roasting pan. It worked just fine.)
Roast, shaking the pan occasionally ( just stirred them), until the chickpeas turn golden brown, about 15-20 minutes.
They should be soft on the inside and a bit crisp on the outside.
Toss them with parmesean as soon as they come out of the oven.
