I just made this batch of mush from one cup of that Indian Head corn meal. I had enough for a bowl of mush and a brick of mush. I tried my sugar experiment. After cooking and before molding I added some sugar. When I slice the brick and fry some up we'll see how well it browns this time. The bowl of mush I am eating right now and I put some Olivo and salt and pepper on the top.

I bought these little silicone loaf pans at the dollar store today. I will try them for corn bread and mush. They are a good size to make heavy bread loafs with for hiking. I did that years ago and really enjoyed it.

I use to make skillet corn bread all of the time years and years ago. I just found the recipe that I use to use.

I think that I should be able to try this with those small silicone loaf pans that I just bought.

That mac & cheese maker worked good as a mold. I just cut 2 slices of that mush and fried them only 5 minutes per side. They got lightly browned. I just chipped a tooth while eating it I can't blame it on the mush. It is where I have a preexisting problem. My teeth are bunched up there and they have been bothering me a lot. I get a lot of pressure and blood from there.

Ouch, sorry that it's getting so much worse. I hope it won't be too much longer before the oral surgeon can take care of this.

I just made these 3 loafs of cornbread using the basic cornbread recipe above in my new mini silicone loaf pans. They were in a 400 degree over for 20 minutes and I tested them with a toothpick.

Did you know that most baking powder has aluminum in it? I got the only one that Walmart has that doesn't.

Yes I always buy the brand without aluminum.

Why do they still have aluminum in them? I looked and they browned nice on the bottoms.

I don't know why some brands still have the aluminum. They really shouldn't, though.

From what I've seen it isn't some brands it's most brands. I am trying a few slices of the cornbread that I just made. I used Quaker yellow corn meal and light brown sugar because I have a lot to use up. It tastes good and is not wadding and jamming up in between my teeth like wheat bread does.

I do and have a gluten free variety I make now and then. Sometimes I pour the batter over a mixture of beans, chicken and enchilada sauce to make a kind of 'tamale pie.' '

I can't eat it with chili yet but I look forward to trying it with tomato soup.
