This is the corn meal that I have now. I just bought the plastic container to store the Indian Head corn meal after I open the bag. I have learned that most cornmeal that you buy in stores is not whole grain. Not only is the Indian Head corn meal whole grain if I remember correctly it was also cheaper.

Looks like there is lots of interesting history with johnny cakes. I hear them also being called hoe cakes along with the same history being given but I know that this can't be so because the British made it illegal for colonist to have metal shovels.

Looks like they turned OK. Also, if you don't want them as brown, a slightly lower temperature would work.

I guess they turned out OK for the first time that I made them. I switched to EVOO which worked better. I'm thinking I might like it better if I put some sugar in my mush after cooking and before letting it set up. The browner it gets the harder the crust is so I would only want it very slightly brown.

Yes it does, but then hydrated foods do expand when re-hydrated.
